It's been a roller-coaster for pork belly meat, as far as prices go -- pork prices hit an all-time high last year, then plummeted in April 2015. But because we throw bacon on everything during summer's barbecue season (and, as Bloomberg News points out, bacon fuels sales at restaurants such as Wendy's and McDonald's that roll out special menu items), demand -- and price -- is on the rise. Pork production rose 15 percent in June from last year, reaching $1.6968 a pound, a one-year high, as of Friday.
In case the price of bacon gets any higher, you'd be wise to grab as
much as you can and get your fix from the recipes below. It's OK to hog
it all, especially since you can (and should) freeze some while you're at it.
